Tasty but extremely high fiber content can lead to some bad times later
It tastes pretty good and is quite high in protein. For those of us that don't eat gluten, a high-protein/gluten-free pasta is hard to come by. It looks odd in that it's black, but that's not a big deal. However, along with its high protein content is an extremely high fiber content. If you eat the entire box in one sitting, for a little less than 800 calories (not a huge meal), you get over 150% of your daily recommended amount of fiber, in one sitting. If you're unaware of what fiber does in the body, it regulates your gastrointestinal system and keeps you regular. Which is a good thing. But so much in one meal can lead to a lot of indigestion, cramping, diarrhea, etc.So I'd recommend this as a side dish, but don't have an entire plate or two of this as a meal.

The best explore cuisine variety.
I am a vegan and very conscience of getting adequate protein and fiber every day. Explore bean pastas have an extraordinarily high protein and fiber content and I have about 2 ounces every night with my dinner (about 25g of protein and 15g of fiber). I currently rotate edamame spaghetti, black bean spaghetti and edamame and mung bean fettuccini. For what it's worth, I find the black bean and sesame fettuccini the tastiest with the best texture. I eat it plain with a touch of salt and black pepper or mix it with one of my bean concoctions. Love it! (As a cautionary note, do not confuse the taste of this with regular pasta which is MUCH tastier. The problem is that while it taste better, it is really what I call "empty calories" with very little nutrition.)

These are my absolute favorite noodle.
I no longer eat regular wheat based, high carb pasta. I've tried several substitutes made from varying ingredients (including spaghetti squash and zoodles) but these are my favorite for alfredo to spaghetti...They do not swell like regular pasta. They stay pretty much at their original size during cooking. The texture is different but I find that I like that about it. At first bite, it kind of reminds me of a mushroom texture but as you chew, it has more of a meat like texture. Which, makes it more satisfying than regular pasta.for ref: 2 oz dry = 190 Cal, 6 g fat, 3 g total sugars, 0g added sugar, 6 net carbs and 23 g protein.

Black bean & Noodle.
I used this product to make a vegetable & pasta dish. It was utterly delicious . Since making a chain my diet it will be a noodle substitute.

Tasty, low carb pasta option...
Really liked this variety of Explore pasta. Unfortunately, it would occasionally create a bit of intestinal discomfort. This is not every time, nor for every person, but the the diabetic in our family experienced it.

soybean, not black bean
I liked it well enough until I saw that it was made in China and that it's black soybeans, not black beans. Those are different beans.
