It is actually from Hatch, NM and tastes like pulverized green chile powder. If you are expecting salt, any onion flavor, you will have to add it.

I dont think they have they are just dehydrated

Q: How can you be sure you are getting true hatch chile power (green)? most of the ones i have found are made from anaheim peppers. i hate being duped!

The label says it is made from Hatch green chilies. I think all the chilies grown there are Anaheim chilies by type. It’s just something about the soil in the Hatch valley that gives them the distinctive taste.

Q: Is this mild, medium or hot? Odd they wouldn't say?

I would say mild but my daughter thinks that there is a some heat- minor - but I heat up dishes with other spices. I use it on everything, I've even sprinkled on popcorn. The best part is that it provides a true green chili flavor. I love to use it most in my chili. Everyone loves it but can't guess at the spice that sets it apart. I also use the Hatch red powder and love it just as much.
