How much cheese does this kit make? The kit says +- 30 lbs but another answer in the customer questions said this only makes one pound. ??

I don't know exactly how many pounds it will make but 30 pounds is a much more accurate estimate than 1 pound. Perhaps the person who responded with 1 pound meant that it produces around 1 pound with each batch. Suffice it to say that you will be able to make multiple batches yielding a pound or so each before you run out of any ingredient and then most of the ingredients are easily obtained to continue your new hobby and try new recipes. It's really a beginner's kit but if you are a foodie and have never made your own cheese you will not regret starting with this kit.

I know this is an odd question, but could you use almond or soy milk with this and get comparable results?

Alex, I have tried a few kinds of milk from the grocery stores...Skim, 1% and 2% and they would not set. They came out very soft. Almost like a spread and no flavor. No one cared for it. Whole milk was ok, but the best is raw milk right from the farm. It was " GREAT ". So I'm thinking Almond or Soy milk ( which has no fat contents ) won't work well at all. I hope this answered your question.

can you use store bought milk? we can't figure out if our store milk is ultra-pasteurized or just regular pasteurized.

Yes, of course you can. Just buy regular whole vitamin D milk and AVOID the expensive crap that is called organic and natural. That's the only milk that, as far as I know, is Ultra-Pasturized! I believe that was created to prevent you from making cheese at home. YouTube has some great videos on cheesemaking, check them out.
