Excellent, the Real Deal
This cheese is authentic as you can get (although it was not made from goat milk, but I challenge the difference).It showed up packed in ice bag like things and was perfectly fine.Everything went wonderfully with the recipe (below) and would suggest it highly.THANKS!!!!Brown Butter Spaghetti with Mizithra Cheese (OH GOD, SO GOOD)The cheese is a two-to-one mixture of Mizithra and Pecorino Romano:1 part Pecorino to 2 parts Mizithra(I've had it with just Mizithra, but the Romano adds a lot of flavor.#Brown at least 1 stick of butter per pound of spaghetti or linguini.#You should see little brown bits in the butter. If they turn black, forget it and start over.#Cook the spaghetti according to package directions.Before draining the pasta, reserve a half of a cup of the cooking water.After draining the pasta, put it back into the pan and add the cooking water.#The cooking water keeps the pasta from becoming too dry#Add the browned butter and stir to completely to coat, then add the cheeses #as much as you like).Stir to coat lightly...you'll see.Italian parsley is probably the best garnishRemember to salt the water. About a tablespoon of salt per pot of water. Otherwise the pasta will turn out bland.And no oil in the water. Oil makes the sauce fall off the pasta.I don't know who came up with the idea of putting oil in the pasta water, but it certainly wasn't an Italian.

Sooooooo good...
This is even better than Deli Fresh Greek Myzithra Cheese, approx. 16oz (1lb).I ordered both, in an effort to replicate that famous SF menu item. The other myzithra does accomplish that -- but this one TOPS it. Better than SF's cheese!For one thing, it's a moister cheese than the other myzithra. More salty. But also much stronger flavored. Doesn't take much to flavor whatever you add it to.A previous reviewer spelled out SF's recipe, and I can't improve on that. However, for a really great variation, try it with durum semolina linguini. The smooth texture of this shredded, moist cheese added to the smoothness of that type of pasta is an added bonus to the awesome flavor. Very decadent.

Cheese Warm On Arrival
I can't speak to the cheese itself, because it arrived in a regular shipping envelope at room temperate. I contacted the seller, who assured me that the cheese did not need to be refrigerated and was "100% safe", but I looked up USDA guidance on shipping foods, and it says otherwise. I just wanted everyone to be able to make an informed decision about whether to purchase because I had assumed this would be shipped in a way that kept it cool. Some people may not be concerned about the cheese getting warm in shipment, while for others that might be a deal breaker. At a minimum, the cheese will not last for as long as if it was stored properly, so make sure you can go through nearly two pounds in a short time period. Good luck!

The ice pack was not cold when item arrived so we wound up throwing the product away. No one wants to risk getting sick from perishable items not kept cold.

My husband's favorite
Couldn't have worked out better. We discovered myzithra cheese on a trip to AZ but could not buy it in FL. Good old Amazon.com came through, as usual. We now have a year's supply. By the way, this cheese freezes well and keeps a long time. Try making angel hair pasta with browned butter and shredded myzithra cheese. Yum!

Delicious
My love of Myzithra stems from the spaghetti of the same name that was served at the Old Spaghetti Factory. Thank you Old Spaghetti Factory! There is something in this stuff I crave. As I understand this, it is a ripe, or "sharp" feta. At any rate, a chef at the Old Spaghetti Factory was nice enough to share the very simple recipe with me, and a plate of Myzithra, is, well, Heaven on Earth. Good stuff.

MIZITHRA WITH BROWNED BUTTER
This Cheese is the best I have tried and is worth the extra cost for shipping. It has a strong flavor and in my opinion,it is as good or better than what you can order from a certain famous spaghetti chain restaurant. I have tried to makethis dish at home with other "Mizithra" cheeses and nothing has been as good as this one. It is Excellent!

Delicious
This is admittedly pricey, particularly when you factor in the shipping (though perhaps it's a good deal for market price? Not too sure), but it's quite possibly the best myzithra I've had. Since myzithra is already difficult to find in grocery stores (neither Vons, Ralphs or Stater Bros near my apartment sells it), this is a good way to get some.
