Does the kit come with 2 holders?

Mine did. Just make sure you are getting them for a compatible fryer. They aren't one size fits all, however, I made them work.

What size deep fryer is compatible?

I'm sorry I have a made in home deep fryer but I think it fits on any standard deep fryer.

Does this attach to a commercial deep fryer?

It fits to the side, but unless you use super long sticks the dogs don’t reach the oil.

Will these fit all counter top deep fryers? What do I Need to look for in a deep fryer (gas countertop) for these to work with it?

Not really. This kit is pretty long. You can use it but the whole kit will not fit the back or front whichever you prefer will be emerged and at least few inches will be resting on the outside of the fryer.
