It’s a small cord. Run it through the door. I ran it through on the hinge side.

Q: What would be the problem if I put a hunk of beef that is less then 8lbs? For example a 5lb piece

Depends on shape, but generally I aim for the biggest piece I can find that will fit inside.

Q: Do you need the umahi bags with this product

Nope, just put the meat on the sanitized rack.
