Icebox Cakes: Recipes for the Coolest Cakes in Town

I'm stuck at the chocolate wafer recipe, first recipe actually. The amount of butter is resulting in a flat, non crisp, very greasy cookie that falls apart. I know that it has to be something that I am doing because the recipe was even worked out in metric, which is always a good sign that the recipe testers did their homework. I've followed the instructions to the "T" though, including the freezing of the cookies before they goe into the oven. I've tried reducing the temperature. And I've tried a longer bake, just short of burning the cacao. But without success. There is a pool of grease on my cookie sheets and a flatness and cake like texture that seems to scream "too much butter in this recipe for the sugar to crisp the cookie up when it cools". I am so frustrated with the recipe.

My son wanted this book. He loves it and has made 3 cakes already.

Icebox cakes---some are a lot of work, an awful lot of work! Don't let the idea of an icebox cake make you think that these recipes are easy---they're not. Interesting but a whole lotta work for some mighty small cakes.

I love this book! Beautiful presentation, clear instructions, great advice for cheats and absolutely delicious recipes. I have been working my way through these and my family are in heaven. The Blueberry Lavender? Heaven on a plate!
