Preserved in Sea Salt, these Caper berries are the finest and rarest of gourmet specialties from the Island of Pantelleria, Italy. While capers are the buds of a caper bush, the Caper Berry is the fruit. When Caper buds are left on their bush, they begin to flower and then will become the fruit, the Caper Berry. There is a small yield of annual production and the Capers are protected by the Italian Government and the European Union.
