An interesting book, however... I have been making my own tempeh successfully for 3 years now, from the knowledge I got from various blogs etc.But this book hasn't given me enough information to feel confident to open a commercial tempeh production with the equipment available in Europe in 2014. Too many pages are filled with the way tempeh is made in Indonesia etc. This is of course very interesting but are not appropriate method here. While the other bits of american western equipment described I have not seen here....Written in the 70s it is a bit outdated, and also a very interesting part of the process, the innoculum production is not covered in enough detail, in this edition. This was however part of an older version of this book which is no longer in print and has been removed in subsequent editions...My 2 cents...
