This is the only pectin I use in my pastry baking now. Much better strength and more consistent than the liquid stuff you can find in stores. I particularly love it for things like pate de fruit.

This is not pure pectin, the title is a lie.
Zoom in on the photo and read the label, I wish I had done this before ordering. It says, "list of ingredients: High methylester apple pectin standardized with dextrose 56% - 63%." That means that OVER HALF OF THE CONTENTS IS DEXTROSE. Aka, powdered corn sugar. And aside from the rip off price for an impure product, I am allergic to corn. Just a waste in every way, can't use this for anything. Go find actually pure pectin, it's out there.
