Q: Has anyone tried using xylitol for making jams or jellies? Does it really bake up like sugar?

No, Xylitol doesn’t not bake up like sugar. It will not “re-harden” once it has been heated. So, if you are making cookies and like them more on the crisp side, you do not want to use Xylitol. It is great for brownies, cake, ice cream and all those things were we want a soft silky texture. I have not made jelly with it but if you do decide to use it for that, make sure you get the sugar free pectin or the jelly will not set up at all. I will be trying it in jelly as I think that would be great. I believe the jelly will be more of a soft set than tradition jellies but I make freezer jelly because I prefer my jelly closer to syrup than the stiff stuff sold in stores.

Q: Is the only ingredient birch xylitol, nothing else?

I checked the bag and their website and no where did I see that it is 100% birch xylitol. It says it's 100% sugar free. I'd never checked for ingredients. I wonder if the product isn't required to list ingredients? Please post if you ever find out. Their website is healthgardenusa.com. You may want to double check 'cause sometimes I get bored and lose interest. I would have stopped reading my reply after the word xylitol.

Q: On my previous orders the xylitol was always granulated. On this order the xylitol seems powdered. Is this a recent change?

The previous was a 60/40 mesh now we tried now a 30/80 mesh so it dissolves faster in beverages and wont clump when baking. we would appreciate feed bake we can always go back to the larger granular if wanted by consumers.

Q: Will you ever go back to the fine mesh granules? I do not care for the larger coarse ones.
