If you want a full flavored, aromatic cheese that will stand up to hearty breads, salads, olives and spices try Garrotxa. I first heard about the cheese on "Myth Busters"; they were trying to prove/disprove that a wheel of cheese could be fired from a cannon and rip a hole through the sail of a ship. The only cheese that could do it was Garrotxa! So, I had to track this cheese down and give it a try. I am very glad I did, I enjoy it as an open-faced bruschetta-style sandwich with various salad fixings - shredded cabbage, diced tomato and carrots, olives and drizzle of olive oil and always (for me plenty) fresh ground black pepper as a finishing touch.Be careful what you touch after handling the cheese, wash your hands, or your house may start to smell like Garrotxa.
