Perfect for cutting meat!
This is my best knife for cutting up meat. A must have and price is affordable. I stopped buying other expensive brand knives that lose sharpness quick.

Wow, super sharp, great hand feel, makes quick work breaking down and trimming large cuts. Just be careful and ware protective gloves. Did I say super sharp?

Breaking Knife
If you are economically responsible like myself (cheap) you might cut your own meat. I buy chuck roasts or a whole chuck and cut steaks out of them. A breaking knife is used to cut the individual muscles out, but is not good for making a cut across the grain for a steak. Pair this with a Granton Edge Cimiter which easily cuts across the grain for cutting steaks out of a roast. Mercer Culinary BPX is a good quality knife for home use. Just take care of them by hand washing and drying. They can get rust on the edge which is not unusual for a really sharp knife. Recommended.

Sharpest knife I own
This is the sharpest of three knives I purchased off of Amazon based on recommendations from a YouTube "Pit Master" to trim brisket. One of the other knives was a Victorinox, which I purchased based of the legendary brand name. The Victorinox was dull out of the box and would not keep an edge after having to sharpen it twice to trim a single brisket. So, I switched to this Mercer knife and the difference was night and day. This Mercer came razor sharp out of the box and I trimmed a brisket without losing any of the edge. This Mercer is now, hands down, the sharpest knife I own.
