Aretha Frankenstein's Insanely Great Pancake Mix - 32 Oz Box

Awesome stuff!!!

A little more hassle to prepare than the typical pancake mix but SO worth it. The pancakes turn out absolutely delicious. I ended up eating them with nothing on them. I usually reach for the maple syrup but not for these.

Husband and I are from the Seattle area and just happened to be traveling through Chattanooga Tennessee when we found this little breakfast place called Aretha Frankensteins. Best pancakes we’ve ever had. Came home talking about how we wished we could go back and have more, then found the mix on Amazon. Ordered and Made them with buttermilk and canola oil per instructions and wall-la! Just like we’re back in Chattanooga all over again. Love these and you will too. More like a cake than a pancake but not as sweet, excellent texture and flavor. Serve with blueberry butter and you’ll be in pancake heaven.

We went to Crocketts in Gatlinburg and it changed our life forever! These were so good. We were 50 years old when we learned the difference between griddle cakes and Pancakes. My husband used a 3 inch ring to cook them and they turned out perfect. So yummy!

You simply don't find a pancake that tastes any better than this mix. They are light and slightly crispy on the outside and perfectly cakey on the inside. They're not biscuit like or bready, they are exactly what the pancake should taste like! Awesome with chocolate chips or fresh berries!

Follow the recipe and do nothing but add blue berries for an amazing treat. So good!

What would you fix for breakfast and have AGAIN THAT NIGHT even if you had to do both times from SCRATCH??!!These pancakes are amazing. They are not crepes! LOL No paper-thin wafers here. They are generous, fluffy, light, and delicately crispy on the outside with an airy inside that soak up more syrup than you’d ever admit to your kids.I make them smaller than the instructions recommend. On a medium hot griddle oil with canola, so it shouldn’t smoke. Heat the griddle first, brush on oil, then start ladling out the batter. Make it exactly like the instructions is recommended using buttermilk. Last time I did not have buttermilk, so I mixed what I had on hand: 2/3 C skim milk, 1/3C heavy cream, 1 T apple vinegar. They were excellent.Best to cook up however much batter you make and freeze any leftover pancakes than keep leftover batter for another meal. The leavening deflates a bit, if you do, but it still makes a good pancake. I freeze leftovers in one-serving amounts so thawing is quick. Then, I toast them to reheat.BTW the batter makes superb Belgian waffles.
