I love this cookbook
I read a review of this cookbook in the WSJ and thought to myself that I did not need another cookbook but I bought it anyway and since I'm on a 30 day diet of no animal products am using it quite a lot. It's easy to sub out some coconut milk for cream and olive oil for butter, tofu for paneer etc. Everything I've made so far is so tasty - and easy and fast to prepare.

Wonderful recipes and not the usual same old
I follow Ms. Gulati on Instagram where I find her offerings looking delicious and somewhat unusual in quite a wonderful way. As a result I decided to order her book and it did not disappoint. It will no doubt help me in my mission to convince my husband that food can be absolutely delicious yet contain no meat!

Excellent tutorial on spices. How to choose, prepare and mix them as well a suggestions for use.
Best cookbook for Indian food ever. Doesn't assume you know anything about the prep work needed.

interesting recipes, but written with British measurements and hard to fine spices unless you have an Indian grocery store near

my new favorite cookbook
I first heard of Roopa Gulati through Diana Henry, who is good friends with Gulati and includes her recipes in books like A Change of Appetite and Simple. (spicy scrambled eggs and the Mumbai Toastie are to die for!) Gulati is unable to tour due to the Pandemic, so is doing cooking demos on Instagram. She's friendly, engaging, and her kitchen won't make you feel like a worm cooking in a hovel. (which tells you about my kitchen. or me.) The book itself is filled with recipes omnivores, vegetarians, and vegans will find useful. No fancy kitchen equipment is necessary. Depending on on where you live, a trip to an Indian market or online order may be necessary, but few ingredients are truly unusual or hard to locate. I had to substitute a flour when making a flatbread and it worked out fine. The results were delicious. Whether you're a sophisticated Indian cook or new to the cuisine, I recommend India: the World Vegetarian wholeheartedly.

Fantastic and delicious Indian cookbook!
Roopa Gulati has written such a great Indian cookbook. I want to make every recipe in this book! This book is perfect for anyone looking to learn more about the beautiful food of India, vegetarians, and experienced cooks already familiar with Indian food. Roopa's enthusiasm and warmth for sharing her food comes across in all her recipes. Her South Indian Rice and Lentil Pulao with egg curry is already a family favorite. I highly recommend this fresh and flavorful book.

Absolutely delicious!
Wow! What a book!! Obviously it looks great as a nice, high quality hardback, full of beautiful pictures and easy to follow recipes. But what's even better is everything Roopa has put into this book. As an Indian myself, i am absolutely salivating everytime i flick through this recipe book. You can tell this is real (and quality) tasty Indian food, with recipes that are like you'd cook as an Indian at home. But there are other incredible fusion and unique items that have not disappointed when trying. This recipe book also really spoils you by being interspersed with really informative basics about Indian cooking - the difference between dhaals, how to make different chutneys and pickles, how to do a perfect basmati rice etc etc etc. It's not just "a recipe book" - it's the gift of lessons in real indian cooking spoilt with exciting unique fusion dishes too. Only made a few recipes too and am so excited to keep trying more!

Wonderfully authentic recipes you will make again and again
I have a collection of Indian recipe books but none come as close to recreating the flavours and aromas of the dishes I have tasted while travelling in India or from some of my favourite restaurants in the UK, than the recipes in this book.With a few spices and some fresh ginger, coriander and curry leaves you will either want to batch cook and portion freeze these dishes or make them on a regular basis, they are so good. Do watch Roopa's videos on instagram for some recipe demonstrations and other helpful tips too.I don't know how I managed before I had small frozen portions of curry leaf and coriander oil and my raita which I thought was already quite good has now been perfected by following Roopa's recipe !I have gifted various family and friends with this book and cannot recommend it highly enough.

A fab addition to our Indian cookery books.
Bought this book a couple of weeks ago after seeing Roopa’s videos on Instagram. So far we’ve made the Tarka Dal (I’ve been in search of a ‘favourite dal’ recipe for a while and with the addition of smoked coal, tips in the book) this is it. The aubergine mash is delicious (I’ve had this at a famously good local restaurant and now have the recipe) but the sweetcorn curry is a must try - unlike any curry we’ve had before but deliciously different and will definitely be making again after we’ve tried the tikkis, Chaat fruit salad, Jackfruit & Orange Biriyani ... I could go on but suffice to say, a fabulous addition to my many other Indian cookbooks.

What a fantastic book
Tried several of the recipes. All winners so I’m now working my way through the book. If you like food from the sub continent, buy this.Whether you are a veggie or not you will love it.

Fabulous book, a firm favourite that will be used over and over
I love this book. I'm not vegetarian, but that doesn't matter, the recipes are fab. We had tandoori butternut squash which was lovely, and riatta will be made over and over because we love it as a salad dressing. Can't wait to try more dishes, there are so many delicious recipes. Also great hints and tips on how to use spices, different types of ingredients etc
