Q: has anyone used this in the car? would it work for a long car ride?

They are actually pretty study, we have two and love them for all sorts of activities, although ive never used it in the car, i could see it fitting right over my childs lap in the car

Q: I was wondering what the actual height from the floor to the bottom of the tray itself is? basically if it will fit over my child's legs or not?

6 inches. Yes it fits over the child's legs.

Q: Could this possibly work with a forward-facing car seat?

No. It would not fit over the car seat. Or sit level. I was not happy with the quality of this product. The pins came loose and it was quickly bent out of shape.

Q: Do the legs lock once they are open so my daughter cant close or pinch her fingers?

No they don't have a locking mechanism on them. I bought these for my 3 year old granddaughter and she has no problems. She loves it.
