Fantastic quality knife
I have several Wusthof knives already, so I knew this would be good quality. Always sharp, good weight which makes it easy to use.

The Sharpest Tool in the Box
Although expensive, this paring knife is a sound investment. It is top quality, small enough to fit comfortably in the hand, and incredibly sharp. It easily slices through fruit, vegetables and meat, and has a neat plastic case to fit in when not in use. I recommend highly, but care needs to be taken when using.

I have a full set of Henckles kitchen knives, the Professional S series. They are wonderful knives with forged blades, full tangs, and the 3-rivet classic design. They are designed for a lifetime of service with proper care and sharpening. However, I needed a particular knife that was not in that series: a 4.5- to 5-inch utility-style knife for everyday food prep purposes. I found this 4.5 inch one in the Wusthof Gourmet series for a good price and decided to try it. (I already have a 3-inch spear-point paring knife from this same series and found it quite nice to use). While it is a stamped rather than forged blade, I found that to be a good thing. The blade is thinner from top to bottom, with a thinner handle, so the knife overall is comparatively lighter and more flexible, providing the ability to make very precise cuts. IMHO it is the ideal size for slicing and dicing fruits and vegetables or prepping small cuts of meat or fish prior to cooking. The blade is actually 4.75 inches, so it's a perfect “just-right” compromise between a 3- to 4-inch paring knife and a 6-inch utility knife. It also has a sufficient bolster to protect your fingers. And for just $40, less than half the price of the exact same knife with a forged blade in the Wusthof Classic line for $95, I think it is a tremendous value for a knife produced by such a legendary brand. Highly recommended.
