This has to be one of the best books I have ever purchased for cookery. This book has everything you need! from making stocks, making pasta, different styles of potatoes, deserts, pastry, sauces, the list goes on and on. Each section is very informative and precise. The chef i work with has an older version of this book and he actually prefers this edition as it has plenty of pictures. (He got his in the 80's). If youre studying cookery, Work as a chef, in the kitchen or even a budding cook at home this book is invaluable!

Honestly speaking I don't regret buying this.

Ideal for cookery students. I find it very helpful for my nvq course. Technics are described in detail, with recipes to help you to master them. Pictures are good quality. Very good book, I would recommend it to students, but also to people with a passion for cooking and are looking to improve their skills.
