This is great and very interesting cooking book, the culture of the cooking comes across very well and the ingredients are easily obtained.

I absolutely love this cook book. Interesting twists on classic Scandinavian recipes, robust and diverse flavors, and the most beautiful photography of any cook book I own. A couple of truly classic recipes are missing, which is a small bummer (no Christmas cookie or cinnamon bun recipes, which are large parts of that regions baking scene), but what is there is delicate, delicious, and for the most part, simple to prepare. A must have for any curious cook or Nordic cuisine enthusiast.

This is what I get for not fully researching and "assuming" before I purchased it. I was really looking forward to seeing some recipes from Iceland. It is the land of fire and ice....but in this instance I guess it has a different meaning. I wonder why it was excluded....
