Q: How well does this handle potatoes?

You'd have to quarter them but I use it for Potatoes O'Brien all the time. I just take it a little easy without forcing because sometimes, I have to halve the quarters to make them thinner.

Q: Is the dicing blade on this smaller than the progressive fruit and vegetable chopper, which is too large of a dice for celery?

The smallest dicing blade is 1/4 inch, which is what most recipes call for.

Q: Would the cleaning tool sold on Amazon for the Vidal is onion chopper work on this model

I believe the cleaning tool for the vidalia onion chopper will work just fine for this!
