An excellent text for those considering food careers.
This book is a fantastic all-encompassing look into the world of becoming a chef and cook. They dive deep examining the choice of going to Culinary Schools vs apprenticeship. What schools are good, extensive advice on job interviewing, etc. if you are even remotely thinking of going into the food business, this book is required reading. Lots of history, excellent advice from today’s top chefs, lots of informative side bars. Just a very thoroughly put together text that is a fast and engrossing read. I highly recommend it.

Could change your life
Fascinating book. Was recommended to me but a friend. I read it while I was in culinary school to try and decide if it was really what I wanted to do with my life. It definitely made me think things over and gave me some good perspective. This is not a book you read for the photos. It's informative and will helpful in deciding what type of cook you want to be. It's a ni nonsense guide to what being a chef is really about. No sugar coating here.

keep reading no matter how boring it seems
When I began reading the book, I thought it was a complete waste of money- the begining was just aweful. BUT, after a while it gets so interesting that I did not want to put it down. I give it 4 and not 5 only becaUSE you cannot begin a book that is full of good stuff with the most boring stuff: disappoint people with the first chapter- its a waste of a great book since poeple will not want to keep reading it!!

Excellent Variety and Perspective
I am a restaurant owner and this is the fifth copy of this book I've ordered because I love it so much that I keep giving my copy to people. Each time I pick it up something new speaks to me. I love that the contributing chefs are both classically trained and self-taught. It offers realism of the industry and love of the art. It is fun and serious, inspiring and pragmatic and a great addition to any kitchen or library.

My son was interested in becoming a chef and going to culinary school. Thanks to this book it gave him some insight on his path to achieving this. He has since started working as a line chef and trying to gain experience and has opted to gain hands on experience rather than investing in school.

A must read for any potential chef
Not only does it have a host of delicious recipes for you to make, but it has many, many stories on the how and why for the many things chefs do. In addition, it carries tales of difficulty and trial to let you know that this is not an easy industry to thrive in, however, it does say how much satisfaction you can obtain if your heart is in it.

Small compact textbook. Has some recipes in it that are good. It was required for me to get this for my culinary class, so I wouldn't normally buy a book like this. But it worked for my class and I got it fairly cheap used.

Looks great but I mistook the title
The thoughts and tips on how to become a professional chef are insightful and well done. Unfortunately this was a snap purchase and I didn't read up on the full content of the book. Based on the title and some cursory reviews I thought the material would assist in becoming a "chef" at home, which is not the primary purpose of the book. It's clearly meant to assist those interested in becoming professional chefs.
