NatureSeal For Guacamole & Avocado

We really enjoy the shelf (fridge) life this gives our avocado smash. It's nice to make 3 or 4 avocados worth to eat over a few days rather than making them one at a time for immediate consumption. Great to have the flexibility in avocado ripeness - I can make them when the avocados say they are ready rather than forcing it.I adjusted my recipe to use a bit less lime because the NatureSeal is also tart and can put it over the top. I wish it came in other packaging - a jar would let me spoon out the correct weight for whatever size batch I'm making. It's not too hard to divide the pouches with my gram scale, but bulk would be nicer and, I expect, cheaper.

This ish is magical. It actually REVERSES browning in guacamole. I'm a chef and have a B.S. in Food Science, and I can attest that there is nothing toxic or unnatural in this product: it fights enzymatic and oxidative browning, but it does not extend shelf-life (all this info is on the label). The fruit formula is equally as impressive: the only thing I know of that will preserve apples and pears for more than 24 hours. The only complaint I have is that you can't buy it in larger quantities without a wholesale contract. If you have a contract with a food distrbutor, ask them about ordering 24oz canisters.
