Q: Just bought the 1200wt version. Based on the noise, it pauses several times and then resumes heating before reaching boiling. Is it normal?

Mine does exactly the same thing, and yes, I think it's perfectly normal. My guess is that there's some part of the heating element that gets much hotter than the boiling point of water, and this part is in danger of overheating if left on all the time, which is what you'd have to do to heat the water as quickly as possible. Their solution appears to be that they shut off the heating element periodically and let it cool down a little bit before re-activating it for the next stage. For me, it still heats the water very quickly, so I don't think these little pauses are a problem at all.
