No More Burned Pans Or Scorched Sauces!
Wow! This is no joke! This flame tamer is made from heavy steel, and will last a lifetime and beyond. This is exactly the sort of tool you need for sauces, stews, custards and puddings, especially if they are thick, or have milk or cheese in them. Tomato sauce and chili will be a lot easier to keep from burning with this in your kitchen. Worth every penny!

This was great for a few years, until I got an induction stove....
I bought this in September 2021 when I had an electric (glass) stove. I rate this 5 stars for that type of stove. About a year ago, I bought an induction (glass) stove. I only use this for rice and sauce (gravy, if you're Italian). Sometimes I start the rice on a high temp, so I don't have to wait long for the water to boil. If I put this on the stove AFTER adding the rice, the rice gets mushy because the mat takes a while to heat up. I usually make rice once or twice a week.The mat is now so bowed my pot wobbles, so I can't use it anymore. So for an induction stove, I have to rate this a 3 - it works with low to medium heat, it will last awhile, and it should enable you to use induction non-compatible cookware if you want to (although I haven't tested that personally). Even if I need to replace it every year, it's a LOT cheaper than a Zojirushi.

USED FOR SIMMER ONLY
My gas range has large burner heads. They heat the outer edge of pots and pans much more than the center portions. Cooking requires frequent stirring to evenly heat food. Anything that splashes above the surface gets burned onto the inside of the pot. I was hoped that this would fix that problem. When I ordered this mat I didn't understand how it worked, my fault.This does work for simmering only. First you heat your food to a simmer then you place the mat under the pot. I turn the burner off for a moment to keep from being burned, then you turn the burner on a low heat to bring it back to simmer for as long as you need. The mat is not designed for high heat. Do not put your burner on high while using this mat, it may cause it to warp or worse.If you are like me and want something to evenly distribute the heat, even while the burner is on high, you need to buy a different product. Note: I have Revere Ware with copper bottoms to distribute the heat evenly. My burners still heat the outer edges of the pots first. It then becomes difficult to remove the food that is burned onto the inside of the pot. I don't have a recommendation yet for a heat disburser that will work. If you have a recommendation, please leave it on this review. Thanks.

Kinda works
I'm trying to recreate my Nana's sauce, which needs to simmer for hours, and it was scorching on the bottom even on the lowest flame setting on my gas stove. I bought a new heavy bottom pot and this heat diffuser to combat this problem.I had high hopes, but all I can say is that it kinda works. Between this and the new pot, the sauce heats more slowly, but still ends up scorching. It works, but not as well as I need it to. Moving on to another brand.

Great for slow cooking eggs
I like my eggs cooked very very slowly, so the whites are silky soft (jammy yolks too!). This is hard to do on my old school gas stove. The flame often blows out, and it's hard to get it at the right level. The simmer mat totally solved this. I can use a high flame, about 60% of the total possible, and the eggs cook slowly, and very evenly across the surface.
