Unclear
Lots of nice but unnecessary graphics, but annoyingly unclear. Here's an example: "When a person overeats protein, the body uses the surplus first by replacing normal daily losses and then by increasing protein oxidation. An increase in protein oxidation uses some excess protein, but it displaces fat in the fuel mix. ..." Huh? If a person eats any protein it will first be used to replace normal daily losses. But forget that, what does it mean to say that it "displaces fat in the fuel mix," do you suppose? Is the percentage of fuel lower in fat because there is more protein, or is something else going on. This book turns learning nutrition into a guessing game.

Low Fat Milk: the new super food
From the moment I opened the book I felt like I was being treated as a fat person who needed to lose weight. I thought the information in the book contradicted itself at times. Fat is terrible, don't eat fat, well...you do need some, but not too much. It will make you fat, well...an excess of calories is really what makes you fat, but really you should just drink low fat milk and cut way down on fat. Only 30% of the world population can properly digest lactose as adults but you still should eat dairy (preferably low fat). Why not just tell us that people may be able to tolerate some lactose and here are the foods you can eat to get the same nutrients as dairy products? If we couldn't survive without milk vegans would have died out a long time ago. I didn't come across a chapter that didn't mention low fat milk, granted I only read the first 12 chapters. I want to learning about the effects of nutrients on the human body I don't want to know what to do to decrease my weight, if I'm educated I'll be able to figure that part out on my own.I'm giving it three stars because I liked the layout and I appreciated that the terms were defined in the margins. Overall the book was more of a self help book with a little information on the physiology behind nutrition. So whatever you do drink low fat milk and avoid alcohol.

This book is the worst science book I have ever read
This is a review on the context of the book not the shipper. This book is the worst science book I have ever read. Definitions of words are so unclear that you literally have to google search them. I do not get why my physio professor made us invest in reading this. I generally learn from the book but this book is so horrible it's unbelievable. Definitions are not described at all! Shame on the publisher just making a quick buck off the students that depend on it!!

Learned a lot of new things
Learned so much! Whether you’re in school or not, everyone should read a nutrition book.Who knew that if you eat properly, you do not need a multivitamin? I’m more inspired to take my probiotic too. Also, sodium is in everything! Also, foods with fat do not make you fat. And, so few people understand the different kinds of carbs. Did you know veggies have tons of carbs? Must read.

but the book is honestly one of the best text books I've ever been required to use
I had an issue with the rental (pages missing), but the book is honestly one of the best text books I've ever been required to use. Could be a great tool for someone wanting to improve nutrition outside of school.

Thanks very appreciative
I’m not going to review the book itself because i ordered the book for school, not my leisure. The book came with all its pages and they are still very neat even though it was used. For the price I’m very greatful being a college student books are REALLY expensive. At my school it was 125 and on Amazon 25. I took pics of before and after i put the pages in the binder. Very neat very clean no writing in the book no missing pages . Of course with the price it never came with the online part.

I will keep for reference. The loose leaf allows me to carry a few chapters at a time and can study anywhere--without the weight of this very large textbook. The format of the chapters repeats points that enhances your learning without even realizing it.

Great book! Loose leaf needs a 3 ring binder!
I purchased this book for a course I am taking. Please be aware if you purchase this loose leaf addition that each page is 3 hole punched for an American style binder. I have not been able to find a suitable binder at normal high street stationery shops here in the UK. 900+ loose leaf pages!
