Oddly soft. Normally it takes effort to get Parmigiano Reggiano cheese grated. This one grated too easily, almost like a brick of generic cheddar. The flavor was also much milder than I was expecting, especially for a 24 month aged version. A minor sheen of oil was felt and seen, something unexpected for a hard cheese like Parmigiano Reggiano. It oddly lacked the crystals that are super common for Parmigiano Reggiano.Overall, a good value for the money. Not bad by any stretch. I personally prefer bolder flavor (and harder texture), but I'm sure there are those who would prefer a softer and more mild flavor like this one.I'd recommend this for someone planning on using it on a hot pasta dish, which could help mask the softness, and where bold flavor is not wanted.

This cheese came well packed in vacuum wrapping and that was packed in a padded insulated pouch with a small ice pack. On cutting it open it was exactly what we expected and love the flavor and how thin it shaved without falling in to crumbles like other like cheese we have tried. We will order again, thank you!
