WARNING: many charcuterie projects to come with this...
Quick shipping (specially with prime) nice packaging and the salt has worked like it is supposed to. I did not think about it, but this bag was perfect! It will last for TONS of project.WARNING: once you have this salt, you may embark into many charcuterie projects. Since I purchased this, I have cured various style dry sausages (Spanish Chorizo, Soppressata, salame) and managed to cure meats such as Lomo embuchado, Bresaola, Lonzino and Pancetta.I blame the Salt for my new hobby.Jokes aside, I definitely recommend it if this is what you are looking to use it for.Please note: it comes in a simple bag that is labeled! But it is not resalable. I recommend you get a nice package to store this salt (and preferably away from children and pets!).

great product and works just fine
great product and works just fine, but if you are anything but a commercial producer of preserved or smoked products keep in mind the actual amount you may actually need before buying a whole POUND. A pound will last me 3 lifetimes and I bought two! I use it about once a month or so..., just family sized batches of fish for wild game for smoking or for marinading, nothing huge. I "might" use about 1/8 a pound a year. A little goes a LONG way, and too much in a recipe can cause health problems. Just a thought about quantity, because I wasn't thinking when I bought two pounds.

Feeling pretty annoyed at the moment
Feeling pretty annoyed at the moment. The product I received has an expiration date on it of 7-1-2016 along with peanut, tree nut, wheat, soy, and milk warnings on it. Am I to believe that I cannot safely make a meat sausage using this product and expect to not kill someone with a peanut or nut allergy or make someone with celiacs or lactose intolerance sick? Is this cautionary or real? I would like to know. And, why would I buy a pound of instacure #2 if it is going to expire in less than 10 months. My online research indicates that I should have anticipated an expiration date (if any) of anywhere between 3 and 7 years. Really frustrated and debating what action to take. Product description on the listing states contains salt, sodium nitrite (6.25%) and sodium nitrate (1%) and gives no indication of these other limitations but states "Actual product packaging and materials may contain more and different information than what is shown on our website. We recommend that you do not rely solely on the information presented and that you always read labels, warnings, and directions before using or consuming a product". There should be no expectation of instacure #2 containing any of the above contaminants. If these warnings are legitimate, then there should be full disclosure of the label warning and limitations in the product listings! I have family with deadly food allergies as well as several with celiacs. I need to know I am not going to kill them!

displeased with shipping cost and method !
The vender chose to ship my $10.00 worth of salt in a flat rate envelope @ a rate of more than the 2 pounds of salt cost ! The product arrived very quickly to my surprise , I had chose regular shipping. If the vender had contacted me and informed me of her choice I could have done two things, ie: added more product to make the shipping cost more feaseible or instructed her to go with my shipping celection and send it regular class 2-3 days ! The salt works for my intended purposes but I will " BACK UP AND REGROUP " before my next order ! Thank You, WC

Almost Too Good
I used this to make corned beef, and there's no denying the effectiveness of this pink salt. I brined the beef for 10 days and slow-cooked it for 12 hours. The beef came out incredibly pink throughout the middle without even a hint of grey, so pink, in fact, that my first reaction was to think the slow cooker must have shut off during the night and left it uncooked. But no, just Instacure #2 working its insane magic.

People, what are try to rate? It's just a simple ingredient which needed for meat preparation,it 's just a special salt and you can't use for regular cooking. What to rate:the clarity of the bag,the color of nitrite salt? Please,it's as has to be.

Home made cured meat is easy!
If you're into preserving, canning, and long term storage, you've got to give a try to curing meats. It's really easy, and the results are delicious - not overly salty and full of chemical flavor like the stuff you buy from the Quik-E-Mart.This package size is probably the best value on the Internet. It's enough for years and years of meat curing!
