Love it. Razor sharp but need honing everyday.
I have been using this knife for about a month and love it, I was replacing my old cheap 8 inch santoku for slicing, chopping and dicing. It is such a nice upgrade, it has to be honed after every use or else it does get a bit difficult to make thin slices, 10 seconds in a stainless steel rod seems to remove all the burrs at the edges.

Great Purchase!
I love this knife. After using Globe knives at my son’s, I bought the 5” knife. I love it too but wanted to add a larger knife for larger items. I bought a different 7” knife w blunt tip & didn’t care for it. It seemed bulky, so returned it for this model 7” Asian Chef knife. It’s perfect!

Best knife ever!
I spend a lot of time in my kitchen cooking. This knife was recommended to me and as I needed a replacement, I went with it. First, I have tiny hand with some arthritis and I was thrilled with the light weight of this knife and how comfortable it is to hold. I love too how nimble it is. I'm not sure how to describe this, but it's so easy to handle and cut precisely which is partly due to it wonderful sharp edge, but also it just plain handles easily and maybe it's due to its unbulky, thin profile. It holds an edge forever too. I freaking love this knife and would recommend this to anyone who needs an affordable easy to handle light knife. Great for small hands!

i didn't believe it, but the rusting is a problem.
I thought the guy who talked about the rust was inexperienced and put it in the dishwasher. I was wrong, I'm a chef, and take very good care of my knives, and I have still been having problems with rust spots. Other than that, this is one of the most versatile knives ever made, Bourdain's favorite for a reason. You just need to make sure its completely 100% dry before you put it away.

Excellent
Bought this Global G-83 after returning a supposedly higher-end SAI series knife that may have been a counterfeit.This one is excellent - very good factory grind and edge which it is holding well after much daily use in the kitchen. This is the current go-to knife in our kitchen, used for everything except paring or heavy chopping - with the 11-12 degree angle on this I wouldn't use it for heavy chopping or where it might hit bone, but clearly it's excellent steel to be able to maintain the edge at that angle over time. Highly recommend and a pure pleasure to use. Keep it away from the dishwasher and from bumping into other utensils - treat it right and I expect it can be a lifetime purchase for home cooks.

This is one seriously sharp knife!
This was a Mother’s Day gift for my wife from my son and I. She was very excited to use it, and just like the global knife that we have already, this is a seriously sharp and fantastically versatile kitchen tool. She enjoys using it on almost a daily basis. The ergonomics of the handle are perfect for her smaller hands. She’s able to get a good grip, without any slipping and gets fantastic blade control. The light weight and razor sharp hot or even better than the wusthof knives she is accustomed to using. I enjoy using it as well, but as I mentioned once again this is a serious sharp blade so pay attention and be careful.

A great investment! Worth every penny
This knife is everything!! It slices potatoes and hard veggies like butter baby. I already knew it was going to be a sharp knife, but when I tell you that I was washing the knife with a soft sponge and it basically sliced the sponge in half lol. Yep! It’s that sharp, and I accidentally got a cut on my finger. Reviews did mention that too! As careful as I tried to be it still happened so just forewarning. I wish this knife had a cover for it, and maybe it does. I’ll have to search around for one. Overall a 10 out of 10! Highly recommend you invest if you want a great quality knife.

SHARP!
I was skeptical after reading the reviews about how sharp this thing is and these people weren't joking - watch out! Took this bad boy out and tested it on an innocent lil apple and this thing could make the thinest cuts because it was so freakin' sharp. That apple was sliced up so easily. My wife and I were both astonished. I own other Global knives and they've done well over the years but this one easily beats them. Now that I got this thing, I'm strongly considering taking my other knives to be professionally sharpened.This thing also looks cool. It's like a cross between a chef's knife and a santoku knife. It's well-balanced and the indentations help to keep the vegetables from sticking. I haven't written a review in more than a decade but this thing got me motivated to write one. Get this knife - now!
