Is this a liquid or a gelatin?

I've used the beef and chicken which are both liquid, like a weak broth. I never used the duck but I would think it would be the same. I've purchased this for my 18 year old cat many times and he prefers the beef which I mix with chicken soft cat food (go figure). Although he is an old cat, I feel like the bone broth helps with his arthritis inflammation judging by the fact he doesn't lay down and get up as slowly as he used to. I am glad to see this back on Amazon. It was out of stock for a while but I found it straight from the Primalvore company. I tried Nulo and others at that time and my cat prefers Primalvore.

Does this need to be stored in the fridge/freezer prior to opening or is it ok in the pantry?

No, it does not. The broth is shelf stable and can be stored in a cupboard or pantry for up to 18 months. Once it is opened it will need to be refrigerated and consumed within 7-10 days. It can be frozen after opening and kept frozen for up to 12 months. A popular thing for many of our pet parents to do is store the broth is to freeze into portion control ice cube trays and pull out a cube at a time. This is fun and very convenient.

How much phosphorus is in a 2oz serving?
