Would these be good for hiking?

They could be the only concern is the weight. I think you would have to try them to see if it is right for you. You can always return if they are to heavy.

Is the insole removable?

Yes it is. I pulled it out and replaced it with something better. That said, these shoes are not very comfortable and I would not recommend them.

how much do they weigh?

I’m sure weight depends on size. My men’s 13 weigh almost exactly one pound per shoe. They do not feel heavy while wearing them either.

Understand that this is not completely waterproof. But would it be suitable for walking around in the rain? Without getting the feet soaked?

In a light drizzle you’ll be fine but in a heavy rain, your feet will get soaked.
