Do these stand up well if not zipped shut?.. or do the sides flop around?

The sides "flop around" if it isn't full and there isn't something inside to hold the sides up. I don't see that as a bad thing.

How many things the storage bags can store? are they sturdy enough to move?

They can hold many things but I can’t give you a number. I put all my sheets in them. They were taking up too much room in my linen closet. Easy to move? Yes, and I’m 77. Putting under bed? I needed to put a plastic garbage bag under it so it would slide easily. So happy to have more room in my linen closet!
