This is Cure #1, also known as Prague Powder Number One or Instacure #1, A mixture of kosher sea salt (93.75%) and Food Grade Sodium Nitrite (6.25%). This Cure should only be used to make cured meats that will be cooked after curing, i.e. bacon, ham, cured fresh sausage etc. Often referred to as PINK salt, our Prague powders are made with the best quality Kosher sea salt and NO anti-caking agents. This cure MUST be weighed accurately (Scales measuring 0.1g recommended) and used according to any recipe that specifies Cure #1 or Prague Powder Number One, usually 2.5g per KG of meat. Prague Powder #1 is a safe and effective curing agent if used correctly and MUST be mixed with additional salt. Perfect for salt beef
I was slightly worried when I saw the size of this package when it arrived, but this is a great product, and a little goes a long way. I brine a beef brisket in a can of stout using 4 teaspoons of Prague powder and 400g table salt, along with sugar, herbs and spices. This makes the best salt beef I have ever had, and gives the traditional pink colour. A good price for the small amount used each time. The packet reseals to keep the powder clean and dry between uses.

When making Pastrami you need Prague Powder, Surfy’s is great I always use it, EXCELLENT quality and service..

Great for making corned beef.
I wanted to make some corned beef from a slab of beef brisket, so I mistakenly ordered the Surfy's Prague Powder #2, but discovered my error before using it. Instead, I used the #1 with a few extra spices and come up with the best corned beef that I've had. I brined the beef for six days and it came out beautifully and delicious.

Easy to use
Did the job it was meant for in my cured meats and kept their colour. Prague Powder is something you have to be careful with in terms of the amount used, but the packaging has the ratios front and center on the packet - by weight for dry curing and by volume for wet curing.

I had spent hours looking online for a recipe or guide to brining a ham correctly and safely, getting more confused by the conflicting information I was reading . I found their website and used the ‘contact us’ function for some assistance on correct amounts. Paul replied that same morning with very clear, concise and simple to understand information.
