Expect perfect results
I already have a larger, more shallow version for quiche which is great and produces really good crisp results. Bought this for smaller meat/fruit pies for fewer people. No reason to expect anything but the same good results. Easy to clean and easy to remove pastry. My china quiche dishes are now largely redundant although they are a good deal prettier so easy to remove from tin and display in the china.

Soggy bottoms defeated
This is absolutely brilliant: I'd tried everything the get the bottom cooked adequately - yes, everything - and could see how this might work. It surpassed my greatest expectations - the first flan I blind baked but it overcooked the pastry, since then the filling goes straight into the uncooked pastry (onions, asparagus etc.) and the pastry comes out just perfect. The non-stick is also terrific making removal so easy. ******
