Is this steel suitable for Japanese knife made by sg2 or vg10 knives? Thanks

This steel would be harder than those steels, based on the specifications of the steel, if the steel hasn't been altered any by the manufacturer. F. Dick and our German made Mad Cow Cutlery steels are some of the hardest on the market and designed to handle the harder forged steels and some of the Japanese steels. If your knives are one of the standard Japanese brands sold in the US, then you are fine, if they are custom or from a smaller manufacturer in Japan, they could of altered the steel some, or used a different product method that made the knife blade harder than the sharpener. They don’t really publish the equivalent grit grade for this steel, but it is very fine—basically one step up from a polished steel—and removes almost no material from the edge of the blade. It’s intended only for edge alignment/maintenance, not for sharpening.
