Wow outstanding piece of kit
Just an absolutely fantastic sharpener, gets them razor sharp, use it regularly and your knives will be razor sharp forever, do not waste money on any other sharpeners, this is the only 1 you’ll need

Sharp blades - very easy to use.
If you have just bought a new high quality knife (eg: Wusthof) it might be better to buy the recommended sharpener for that knife (or better still a whetstone) and then sharpen regularly to keep the factory angle on the blade. Also, Japanese knives will need a different 'asian' sharpener. Japanese knives sometimes arrive not fully sharpened and will need to be professionally sharpened with a whetstone. The best way to sharpen any knife is by using a whetstone, but it takes time and there is some skill involved.I have used one of these (Taylor’s Eye Witness Knife Sharpener) for ten years for most of my knives. Recently the internal steels have been wearing down and not working as well as they once were, so rather than buying replacement steels I bought a new one. I read a few bad reviews for this sharpener, not sure why.. perhaps they aren't using it correctly. The way I use it is by placing the knife down at the back of the blade and pulling the knife back towards me quite quickly. I push down fairly hard and try to keep the knife 'level'. If the blade is blunt you may need 50 or more 'swipes' to get a sharp edge. When you have a sharp edge just give the knife a few swipes every time you use it to keep it sharp. It's very easy to use and, if used regularly, the blades will stay very sharp.

The result is the greater time spent in the kitchen preparing, cutting, dicing, filleting,and chopping a variety of meats, fish, vegetables and herbs.And what do we need for this increased culinary activity? Knives and more particularly sharp knives. And the machine for this is The Chantry Sharpener which is easy to use, swiftly returns sharp edges to all your kitchen knives and stands compactly on your work surface.Get one and notice the difference but remember the old mandarin saying " Sharpy, sharpy, choppy fingers off!"

It's very effective at sharpening knives, and the build quality is almost ridiculously solid. There is a pleasant, reassuring weight to the device and I am confident it will last as long as I do.My kitchen knives are now razor sharp again.
