Works well!
I can't have traditional wheat flour so this is a nice alternative option. I use it primarily to make banana pancakes and cookies and it works well in both cases. It absorbs better than nut flours and is not quite as dense as quinoa flour. If I had to compare, it's kind of in between quinoa flour and tapioca starch in terms of how it absorbs liquid.I do notice that I need to eat at least some protein and fat with it, otherwise I tend to have a significant blood sugar crash (where I absolutely need to eat something) about 5 hours after eating. I get the same reaction with rice flour so it's not a product issue--I suspect it's carbohydrate-related. (I'm not a nutritionist, so you'll have to do your own research if that is a concern for you). I also haven't eaten regular all-purpose flour in many years so I'm unfortunately unable to compare to that.All that said, I'm thankful to have this option!

$2.00 more/pound than in grocery store
This is what I would expect from plantain flour. It is no better nor worse than anything else on the market that I have found. If you’re looking for a good substitute for gluten flour I would suggest cassava over plantain flour. It is close to wheat flour as you ever get.The problem with this brand is the expense. You’re talking about a 7 1/2 dollars per pound. I can get 1 pound bags of plantain flour at the grocery store for two dollars less per pound. That’s a huge difference. This means I can buy 5 pounds of plantain flour at Giant for a little less cost than 4 pounds of this.If you have the time you can make your own plantain flour. Green plantains slice up and dry very easily, then you grind it up in a food processor or a blender. And that’s a lot cheaper still.

Best Flour Substitute Yet
Going paleo/keto means giving up your decadent baked goods. We all try alternative flours to, we hope, achieve a close approximation of breads. I've tried almond flour but really don't like it or its baking properties. Coconut flour is much better, but I discovered this plantain flour comes surprisingly close to the perfect non-wheat, grain-free flour. Of course, it doesn't taste and act just like glutenous wheat, but the smooth, rich flavor pleases my palate far more than anything else I've tried. Plus, when mixed with a little xantham gum, it holds together quite well when making biscuits and flat breads. I can eat hamburgers again!You would think it would be too sweet for bread, but it isn't at all. The dark color when mixed with liquid isn't particularly appetizing, but once you eat the product, you forget all about that. I really love this flour from JEB FOODS. I'm going to order much more in the future.

Very fine texture, good flavor, bakes great in AIP recipes
I started the auto-immune protocol (AIP) and bought this flour to use in some of the recipes I've found. I really like it and enjoy the natural sweetness it imparts. I use it to make banana pancakes and they are delicious and such a wonderful addition to what first felt like a really restrictive program on AIP. I batch cook the pancakes and freeze them, and toast them on the defrost setting in my toaster. They are great for a quick breakfast or snack. The flour is very fine and not gritty at all. I'm grateful to have such a good ingredient for alternative baking!

JEB FOODS Plantain flour
I've been using raw potato starch as part of a diet including resistant starches and decided to vary things with this plantain flour. I ordered this brand specifically because it said organic on the front of the package (which is all that is shown for the product). However, now that I have the actual package I see there are no indications that this product has been certified either as organic or non-GMO. I think plantains by nature are gluten free so the lack of certification for that isn't such a big deal. I gave 3 stars to this plantain flour because it mixed well with water and had a pleasant flavor, but next time I order I will look for another brand with proof thru certification of claims that it is organic and non-GMO.

Good plantain flour. Just tricky to find alternative use for it besides fufu.
Not a bad plantain flour. I thought I could use it to make pasteles but no, I would need fresh guineo verde instead of dried flour. Made okay-ish pancakes but I am on the hunt for some other use. I know I can use this to make fufu but I do not like fufu that much. The recipe on the back is incomplete hence the four stars of this product. Arrived intact and no holes or bugs.

Gritty
The flavor is good but the texture is slightly gritty like there was some exposure to sand. It’s slight but still unpleasant. I will try other brands before ordering this plantain flour again.

Bitter taste
I made gingerbread using 1 cup of almond flour and 3/4 cup of plantain flour. (The recipe called for 1 3/4 cups almond flour.) The flour is from green plantain and has an initial bitter taste to it. The bitter taste was more obvious the first day it was baked. By the second day the gingerbread had almost no bitter taste to it. Other reviewers didn't notice a bitter taste so I wonder if that has to do with the consistency of the product.

Excellent quality product and very efficient and responsive delivery by the supplier. This is one of the best substitutes for wheat flour.
