How well does this hold a edge? Also after a couple sharpening does it still hold a edge like if it was new?

Mine has held its razor sharp edge with moderate usage. Can't speak to possible commercial constant use but works great for the casual fisherman. Nice grip feel while using too!

how does this work on 3 pound catfish?

I only use it for skinning deer and elk, but it is a good knife and I would think it would work well for catfish.

I'll be honest, given the shape of the handle and the design, i do not believe it is full tang. It might narrow out into the handle area but it is very sturdy.
