Does this knife have any flexibility? Enough for most fish work?

No. This is a solid breaking knife for seperating beef carcasses and slicing steaks. It does not have the fish fillet knife flexibility and its BIG. The Shun Classic 6" Gokujo is a great kitchen fish knife, but it's a bit to fine for boning. Well, its thin/flexible profile scares me to much to use it for boning meat.

Could you use this for carving cooked meats?

You absolutely can. It slices very nicely and glides right through steaks, pork, poultry, whatever. It’s my go to for smoked brisket and I find myself using it more than my actual carving knife which can be too long at times. I’ve even had guests comment more on the knife than on my perfectly smoked brisket I’d spent many long hours preparing.
