How do you measure this in comparison to sugar?

Allulose measures cup for cup, just like sugar, and can be used in all your low carb baking. Allulose has the same taste and texture as sugar without all of the calories.

Is this made from corn?

The answer is yes and no. It CAN be made from corn based fructose, but not all of it is. Allulose has the same chemical formula as fructose, but is arranged differently. Because allulose is essentially dietary fiber made from converted fructose, the body doesn't effectively break down the ingredient. Wheat, figs and raisins all contain it naturally. I've been using it in my cooking and baking for about 6 months now. I am sensitive to corn products, but allulose does not affect me. And it makes a killer ice cream.
