Screaming with happiness
This knife is absolutely incredible! The minute I opened the beautiful box it comes in, I chopped up a yellow pepper and I screamed in delight. It’s a strong and sturdy knife and has weight but when you cut the veggies it’s so light like air and it chops perfectly and finely. It’s magical! I’m so excited because I’ve been chopping away since I received it. Before, I disliked chopping because my knives were bad and hurt my hands. This is the greatest knife you can own for your veggies and more! A Fantastic buy and a Fantastic knife!

Great knife
I so needed a good knife. So many turn dull quickly. They aren't sharp enough. Easy cut for the many watermelon 🍉 we eat. 😋

SHARP but slightly curved cutting edge - more so than my chef's knife.
It's been probably 15 years since I bought a new knife, and while I *try* to keep them sharpened, I'd say I'm probably not very good at it. I've heard about Santoku knives and was happy to give this knife a try.Observations:• Made nice clean cuts for the veggies I sliced up. Definitely not crushing the greens but cutting through.• At 7oz, it's heavier than my 8" Dexter-Russell chef's knife (5.5 oz)• It's certainly sharper than my current home knives (with a home sharpening tool - I'd say the chef is enthusiastic but not hugely skilled at this). Also very nicely polished up. Blade looks straight and no detectable flaws on the edge looking down it or inspecting the edge.• The cutting edge of the blade is a little more curved than I expected, I think classic santoku knives have a larger flat portion near the handle, and then curve towards the tip• Handle feels ergonomic and well balanced so far. It's quite pretty• Please don't put your nice knife in the dishwasher. The divas of the kitchen deserve a hand wash and dry, and a lullaby at the end of the day for all their hard work.If I could do it again / would have preferred• A simple storage sheath along with the gift container (which admittedly is nice). Fortunately I had one that fits• A bit more texture on the handle, I'm a little concerned it might be a bit slippery, especially compared to the polypropylene on my other big knife.• Made in USA or Made in Germany (vs. a company founded in Germany but manufacturing in China).Conclusion: If I did it again, for the price, I would probably get a shorter (7" rather than 8") Santoku knife with a sheath and a synthetic handle - uglier but very functional, ideally with a flatter edge, more classic blade style. Maybe look for made in USA, Germany, or Switzerland vs. China.If I fall in love with this knife and it holds a fabulous edge, I'll update my review.

How sharp it is.
I’ve been trying to get a knife like lthis for a long time. It’s great not having to struggle with the veggies

This knife is the best thing I've ever bought on Amazon, hands down. But, be careful as it really is razor sharp like they say.
