The perennial lemon balm plant is a member of the mint family. The most useful parts of the plant (and the way it found its name) are the leaves. You can use the lemon-scented leaves to make tea, flavor dishes, create perfume oil and to repel insects. Some people even use it to make homemade toothpaste.
