Now listen; I have a series of high dollar japanese water stones for sharpening my knives. But... let's be honest, it's a huge pain to get them out, soak them, and then deal with the cleanup. I find that I only bring them out maybe once a year.In between, I'm relying only on a honing steel to maintain sharpness. It's not quite enough. I got this on a whim, and it's nicer than I was expecting. I really appreciate the ability to change the sharpening angle. This is really kind of a necessity. If you have a 16 deg chefs knife but are sharpening at 22, you're going to lose your mind trying to get a good edge on it.Finding the angle isn't so bad. I find that I can just set the knife in the sharpener, and get eye-level while I adjust the angle. When the edge of the blade bottoms out, we're there. I was able to get a decent edge on all my kitchen knives fairly quickly.I will say, this should NOT be a replacement for periodic sharpening, either by a professional, or by yourself with some good stones. I have not been able to pass the "paper test" using this tool. However, that wasn't the goal. It was to get a passable edge and keep it semi-sharp in between sharpenings. For that, it's a great success.

I cook a lot. I notice that no matter how much I spend on knives they always become dull so fast. This sharpener has been a lifesaver. No need to spend oodles of money of knives when you have this.

It works ok.

I have a variety of kitchen knives and haven't had much luck sharpening by hand. This takes the guess work out of sharpening. I was able to find the "original" grind angle on the paperwork from the knife manufacturer, but you may need to estimate by eye if you don't have access to the original angle. Setting and changing the angle is as simple as twisting the dial. A few passes in each slot and the knife is back in business. The "Crude" slot should be your first pass if your knife is in really bad shape, but can often be skipped if your blade is well maintained. I would highly recommend this if you're looking for an easy way to maintain multiple knifes with a variety of angles.
