What is the expiration date of the rice noodles?

I just opened the last 2 cans from a 12-pack I bought in 2020. The sell by date was March 2021. They're still crispy & crunchy, and they taste great!

How do you make chow mein nood;es soft?

These are not meant to be soft noodles, they are used more as a crunchy bed to serve the Chow Mein on. When I was a child, the Chinese restaurant in our town offered Chow Mein two ways - with 'Crispy' Noodles (like these) or with 'Pan Fried' Noodles. The pan fried ones must be what you are thinking of and are made by buying Chinese Noodles raw (just like you buy spaghetti noodles), boiling and draining them and then shallow frying them in a large skillet to brown them lightly. These La Choy noodles are meant to be spread on a platter and the hot Chow Mein poured over them; they will get a bit soggy and soften a little as the Chow Mein sauce soaks down into them but their purpose is to remain crunchy. I would not recommend trying to soak them ahead of time, they will turn to mush.

These don’t taste like the original lachoy rice noodles as pictured. more like chow mean with the added wheat. can i still buy the original rice noodl

I thought they tasted like the rice noodles I’ve always purchased. Chow mein noodles have always been thicker

I have gone to the product web site and I do believe that they would qualify as vegetarian - go the their website and verify.
