A new adventure in baking
I have started baking late in life and try to challenge myself with completely new recipes or techniques regularly. For Easter, I decided to try baking panettone and similar Ukrainian or Russian breads, all of which need molds. However, molds are unavailable in a small Western town near a small city. Even the dried and candied fruits I need are nearly impossible to find. As always, it's Amazon to the rescue.Now that I have these 15-ounce molds and some smaller ones, I am getting this project under control. I have located various fruits and my own lemon and orange peels. are candied. The various sizes of molds available will make the dough stretch to more gifts and loaves sized appropriately for the recipients. Over the next few days, I will start baking to have all the loaves distributed by Saturday—just in time to make cheesecake for Sunday. Busy days—but it will be fun.

Beautiful Easter bread molds
I got these bread molds to make Ukrainian Paska (Easter Bread), and they are really beautiful. They were a bit smaller than I had imagined, but it's actually a good size for giving as gifts. Though the description says these molds hold 15 oz/425g, I found they could hold about 550g of paska dough, and they still barely puffed up past top of the paper. The biggest pain about the size is that none of the recipes I could find are designed for this size, so it takes some trial and error to figure out the baking time and temperature. For a recipe that calls for 800g of flour (6-7 cups), you will be able to fill about 3 of these molds, and the baking time ended up being about 30-35 minutes in a 350 degree oven, lowering the temp to 325 for the last 10 minutes or so.The one note of caution about these papers is that there were some very thin bits of paper that came off the scalloped edges of the molds, and I didn't notice until I had rolled some of the dough over them and they got stuck to the bread. Make sure you blow off any bits of loose paper far from your working surface before you use the molds.
