Can you use the cutter on 5 lb block white sharp cheddar?

I cut down 40lb blocks of cheddar on this handee cheese cutter board. You can absolutely cut down a 5lb block of cheddar. It will even cut cheeses with a hard rind like gouda. The wire will break on anything harder like parm Reggiano. There are 60cm and 90 cm wires you can purchase for the cheese board. 60cm wires would be perfect for getting through 5lbs of cheese.
