Not so sure?
I grew up and hence kept on missing this stuff over the years. I couldn't resist trying it out when I found this on Amazon. Turned out that they were shipped from China. Took a few weeks to arrive. It arrived in a vacuum pack with no less than 8 little sachets of that dehumidifier stuff, may have been ten. Anyway, the first thing I noticed was that they are slightly moist, not completely dried out as I had expected. Few weeks ago, I purchased a similar product but were Japanese make (per weight, the Japanese one is much more expensive). They were dried. I suspected that whoever made this in China, didn't want to spend extra time to dry out the dried squid so that they could get their money quicker. Lastly, as a warning, the taste of this product is not the genuine taste. It is so much more sweeter. I suspect that the taste is obtained by soaking the squid in a sugary solution. I have a little amount of Chinese cooking experience. Dried squids in some Chinese restaurant are soaked in sodium bicarbonate, to get rid of the smell of sea and the fishy taste, at the same time, softening the tough nature of dried squids. This process will render the squid virtually tasteless!!! This is why they will soak it in some sort of solution to give "taste" back to the squid. The Japanese one, however, is totally different. Yes, you can taste a little bit of the "sea", a little bit fishy but not overwhelming, and dry. The driness, however, did not make the shredded squid any tougher than expected. By the way, the way to enjoy dried shredded squid is to chew a little bit to get all the taste out. Anyway, I hope this information will be useful to any prospective buyers.
