Q: is this good for an espresso maker? The manufacture insists it must be course ground or could ruin my new machine.

I would consult your manufacturer that's the only condition. This coffee is coarsely ground. It might be cheaper to purchase a grinder of your own that has settings from coarse to fine.

Q: Do coffee grinds float on top during that whole steeping process?

I use a container meant to brew cold brew coffee. So the grounds are in strainer in the middle of the carafe. I just lift it/them out. But you could also just steep them overnight (I do 24 hours) then strain the coffee into a pitcher.

Q: Can I use this in an electric percolator?

I don't see why not. I think the coarse grind is more intended for cold brewing, but it should work.
