- FERMENTED, UNROASTED AND UNPEELED CACAO BEANS- Chocolate made from unfermented cacao beans does not have the body and richness as that made from fermented cacao beans. Wooden boxes are used for the fermentation of these cacao beans. Only banana leaves and organic sacks are used for insulation to make sure the beans remain untouched by inorganic materials.
