The cheese of my childhood!
This is the cheese I remember from my childhood growing up in Guadalajara. I’ve looked for it off and on over the years, but never found one that had that very unique flavor and texture. The TEXTURE was critically important. As children we called it ‘stretchy cheese’ for a reason! I never found a cheese that had that special texture. Then I saw this cheese; and after the seller assured me that it would be carefully packaged to survive transport in the summer of 2023 (and it was!), I was off on another quest for the perfect Queso Oaxaca!Well, I don’t trust my aging taste buds enough to say that this cheese tastes exactly like the cheese I remember from childhood, but I can say that it came closer than any cheese I’ve eaten since leaving Mexico 50 years ago! It’s the real STRETCHY CHEESE! I’ve bought it twice, and will no doubt be buying it again! Good cheese that brings good memories…..what more could you ask for?

Very Good Cheese
I saw a review that said this cheese doesn't melt, but it does. It is expensive, but it's got that salty first bite that Oaxaca should and is very flavorful. A bit goes a long way in a salad, taco, omelet etc. I cut the rope into about 6 inch lengths and froze it in individual packages. Thawed out fine. I'll be ordering, again. It's a luxury item I'll allow myself.

Not a cheese expert
I was reading over the reviews. Many of them seem to be knowledgeable cheese experts that are familiar with Queso Oaxaca. Lots of them give this cheese a 5-Star. I am not a cheese expert by any means, so take my review with a grain of salt. Pre-pandemic, I would just get my cheese at the local grocery. Mostly just cheddar cheese. As of the beginning of March, I stopped going to grocery stores altogether and started buying all my cheese online. Since I started doing this, I decided to be a little more adventurous and even buy cheese I never heard of. It's been kind of fun. I had never even heard of this cheese before. In a nutshell, my view of this cheese is its sort of a pricey mozzarella type cheese. I have no idea what "crafted in the finest Oaxacan Tradition" even means. What is the Oaxacan Tradition anyway? With that said, I do like this cheese very much and am happy I purchased it. I made a spicy mix in the crockpot with tomatoes, jalapenos, carrots, seaweed, onion, and Japanese sweet potatoes mixed with rice. I had this cheese on the side and it was an amazing dinner. So basically, I thought it was a bit pricey, but am enjoying this cheese and still happy I purchased.

Just like the Queso Oaxaca we bought in southern Mexico
Can't find anything like this in the Houston area, so we thought we'd take a chance on getting this shipped from California. Came in a foil insulated bag with a couple small 'ice' packets which were not cold when it arrived. Took a couple days via UPS to arrive. But there were no problems with the cheese. It came in a balled up big long 'rope' just like in Oaxaca that separated nicely. Included card said to put in the fridge and let it cool before eating, which we did. It was not mushy at all, which all of the local "Oaxaca" cheese purchased locally is, and the rope separated in thin strands when pulled apart, as it should. The flavor was good, and it made great quesadillas. Not mushy at all.I highly recommend this. Hopefully it'll be the same when we re-order in summer. I hope they include a better cold pack to keep it cool in the couple days transit time.
