Fantastic Cheese!
I bought this and then stuck it in the back of my refrigerator for several months. I finally remembered I had bought it and was waiting for an occasion to pull it out and use it on my new Girolle machine. Did that last night for a dinner party with my whole family - adult married kids etc. It was fantastic. I worked beautifully on the girolle machine, allowing use to shave off perfect ruffled shavings. This made for a fun, aesthetically pleasing and interactive activity during cocktail hour. And the taste was superb. The rind was pink which means it had been washed in B Linens bacteria wash. It was also just a little stinky in a very good way - also from the B Linens. The paste of the cheese had such depth in flavor with all kinds of yummy flavor molecules coming through on the palate that must have come from the great grass the cows had eaten. Would buy again! Especially nice that it keeps a really long time in the refrigerator.

Nasty cheese!!
Got a full refund on this CRAP. When it was received it was ( wet) an it tasted just like Dirt !!! I eat dirt when I was about 3 , it came from a third party in Florida, save your $ , wanted it for Thanksgiving dinner snacks no one cloud eat it Nasty!!!! An I have two chefs college trained in the family, upon refund call I was informed to Discard the funky cheese return was not needed..... Nasty

The Monk's Head Cheese is Beyond Compare
As an Anglo-Swiss living in the cheese wasteland that is the USA this fantastic cheese is a lifesaver. Reading some of these comments on here it seems there is an aversion to good old stinky, strong cheese, well not in my household. The rubber-like sanitized rubbish being passed off as cheese in stores here is criminal. Now I'm off to click and buy some Royal Blue Stilton and then I think all will be well in the new world.

This is the most awesome. nutty
This is the most awesome. nutty, complex cheese I have ever tasted... If you use the special "Giroulle" - a tool that was created by the Swiss specifically for it. This shaves the cheese into fine, thin, pencil-shaving-like threads, which when chewed, allow you to experience the perfection. Cutting this cheese into "hunks" or "wedges" makes it too difficult to savor. If no "Giroulle" is available. shave this cheese as thin as you can!!

My bro-in-law was thrilled
Apparently this is the best, stinkiest cheese anywhere. To the stinky part, I can attest. But it's not a bad stink, it's just fragrant. My bro-in-law is English and is something of a cheese connoisseur. I gave this to him for Christmas and he seemed happy about that (not always an easy feat). It's also a huge hunk of cheese so it will last you a while. Fun gift.

Seemed slightly older
We discovered this wonderful cheese when we were in Paris last year. This delivery took a bit longer to arrive, probably because it may have been shipped overseas on my order. The cheese (1.6 pounds) seemed not as fresh as what we enjoyed in Paris. Still good though.

Smell bad, taste great
Cant judge a cheese by its smell. The rind was absolutely horrid smelling but the taste and texture of the cheese was a very good creamy swiss. It worked well in the cheese curler. Will purchase again.

Terrible
Came slimy and smell was horrible. It is spoiled. I do understand it can have sharp smell to it, but nothing like that.
